Banana Cake with Cinnamon Cream Cheese Frosting
We always have leftover bananas that get so ripe that our kids refuse to eat them. So whenever we have a bunch of these bananas we will usually make a Banana Cake. When we were in Target last week, we picked up all the ingredients we would need to make this delicious sheet cake and of course some gold foil plates to serve it on.
This recipe is very easy to make and can easily feed a crowd. This would be perfect for an afternoon by the pond, beach or pool or the next barbecue you are invited to. The rich and creamy cream cheese frosting piled on thick makes this cake sure to be a big hit. Plus because it filled with delicious and ripe bananas, you can feel good giving it to your family and friends.
Banana Cake with Cinnamon Cream Cheese Frosting
Ingredients
Banana Cake
¾ cup sugar
¼ cup brown sugar
1 cup sour cream
½ cup unsalted butter, room temperature
4 ripe bananas, mashed
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Cinnamon Cream Cheese Frosting
1 Tub ready made cream cheese frosting
1 Tbsp cinnamon
Instructions
- Preheat oven to 375. Spray a 13×9 baking dish with non-stick spray. Set aside.
- Cream the butter and sugar together until light and fluffy – about 5 minutes.
- Add the eggs and sour cream to the mixture and until well combined.
- Add the bananas and vanilla extract and mix thoroughly.
- Add the dry ingredients and mix for 1 minutes.
- Pour batter into the prepared dish.
- Bake 25 minutes until light brown in color and cake tests done.
- Let cake cool completely before frosting.
- Meanwhile, combine the frosting and the cinnamon together.
- Spread a nice thick layer over the top of the cake.
A delicious and moist banana cake that is so easy to make with ingredients from Target and everyone will enjoy it. When we go on our weekly Target run, we usually have to stop and look to see what is available at the Dollar Spot and what is new in the party aisle. We really like having fun and festive paper plates to serve our cake on and makes clean up a breeze!
