Cauliflower and Arugula Salad
You’ve heard of cauliflower rice, right? It’s all the rage with everyone following the paleo diet or those just trying to reduce carbs. Did you know you can make a super healthy salad by including raw cauliflower rice? And better yet, you can buy everything at Target! Yes, it’s true, Target is full of healthy goodies to keep you on track.
We bought everything we needed for this delicious Cauliflower and Arugula Salad at Target. The cauliflower couldn’t be simpler to “rice.” We just cut it into small florets and popped them into the food processor. Viola! Perfect cauliflower rice that you can keep in the fridge for healthy eating all week. Add it to soups and smoothies or stir fry it as an alternative to rice.
Adding cauliflower to a salad like this really bulks up the nutritional value without adding fat and calories. Raw cauliflower has a very mild taste and it’s hard to even tell it’s in there.
Here’s what you’ll need to make this healthy Arugula and Cauliflower Rice Salad…
- 1 cup cauliflower rice (simple cut 1 head of cauliflower into small pieces and place in the food processor)
- 1/4 cup dried cherries
- 1/2 apple, sliced
- 1/4 cup pecans
- 1/4 cup goat cheese, crumbled
- 2 cups arugula
- balsamic dressing of your choice
Simply throw all ingrdients into a bowl and give them a toss. This recipe is infinitely adaptable and you can add whatever fun nuts and dried fruit you find at Target. Keep the prepped cauliflower rice in your fridge for healthy lunches all week.
