Mother’s Day is just around the corner and as a mom myself it is hard to celebrate all the other moms in my life as well as taking a few minutes for myself!

I have an easy make-ahead Mother’s Day recipe to make, that actually gets better as it refrigerates. This Ambrosia Salad is the perfect dessert for Mother’s Day or any other day. This ambrosia is sweet and light and perfect to bring to any occasion you may have this spring.

Make-Ahead Mother’s Day Ambrosia Dessert

For those of you who do not know, Ambrosia is typically a delicious mix of fruit salad with pineapple, maraschino cherries, and mandarin orange combined with cream. I believe it is Southern in origin and honestly, it is pure heaven in a dish. My recipe for Ambrosia includes a package of Vanilla Instant pudding for a truly decadent dessert.

The best part is you can get ALL the ingredients that you need at your local Target! Not that I need any excuse to go to Target- I am there at least once a week and yes- I leave every single time with more things than were on my list. Funny story- my husband went to Target this weekend and he left with the only thing he went to the store for. What?! How did he resist the Dollar Spot or the adorable straw handbags they now have displayed (they secretly call my name….)

Make-Ahead Ambrosia Salad

Ingredients

I pkg Vanilla Instant pudding

1 8 oz tub Cool Whip

1 cup mini marshmallows

1 can Mandarin Orange slices, drained

1 16 oz can pineapple tidbits, drained

1 jar Maraschino cherries, drained

1 cup sweetened, shredded coconut flakes

Directions

Mix all the ingredients together.

Cover and refrigerate.

Ambrosia is a Southern classic and I cannot get enough of it. This recipe definitely gets better when it remains in the fridge, so try to make it at least 24 hours before serving.
