We love cupcakes in our home and this recipe for Chocolate Cupcakes with Mint Cookies is easy and moist with everything picked up at my favorite store- Target! I know that we all fall into the trap of just going to Target for one thing but really how can you resist?

I love anything that is a combination of chocolate and mint and these cupcakes are no exception. I have been enjoying baking in the mini cupcake pans this way you don’t feel as guilty when indulging in a treat!

 Chocolate Mint Cookie Cupcakes

These cupcakes are made in miniature for so that you do not have to feel guilt eating them. I think they would be perfect for a St. Patrick’s Day celebration, kids birthday party or even a baby shower, This recipe for mint chocolate cookie cupcakes starts off with my favorite easy ingredient- boxed cake mix.

Mini Chocolate Mint Cookie Cupcakes

Makes 48 mini cupcakes

Ingredients

• 1 pkg chocolate cake mix
• 1 large box instant chocolate pudding
• 1 tsp mint extract
• 3 eggs
• 1/4 cup oil
• 1-1/4 cup water
• cupcake liners
• vanilla frosting
• mint stuffed chocolate sandwich cookies

Directions

1. Preheat oven to 350.
2. Line mini cupcake pans with muffin liners.
3. In a large bowl combine the cake mix, pudding, water, extract, eggs and oil and mix well. About 50 strokes.
4. Pour ¼ cup batter into each of the prepared cupcake pans.
5. Bake 18-20 minutes.
6. Cool completely
7. Pipe the frosting onto each cupcake.
8. Top with a sandwich cookie broken in half with sprinkles if desired.

These beautiful and tasty cupcakes are sure to be a hit at your next party or gathering. These mint cupcakes would be a wonderful addition to a school bake sale or pot luck. I love the ratio of mint to chocolate and the pudding gives these desserts a nice and moist texture.
