fall granola

It’s officially fall y’all!!! I love that the weather is cooling down a bit, the trees starting to change color, the leaves have started to fall, the beautiful sidewalks covered with leaves, best of all the seasonal fruits and veggies, all things pumpkin. You see them everywhere, the shelves are full of fall decor and the aroma of pumpkin spice just seems to be chasing you where ever you go. So the other day as I was walking across the aisle’s of Target I could see the shelves stocked with pumpkin spice latte mixes’ pumpkin spice coffee, pumpkin spice cereal, pumpkin spice donuts and what not. For some reason, everything label ‘pumpkin’ caught my attention. So as I was shopping I decided to pick up a few ingredients to make my own pumpkin spice granola. I wanted to make a quick and easy version without too many ingredients so I decided to go with pumpkin seeds, pumpkin spice mix, oats, almonds, pecans and cranberries.

These seem like a perfect list of ingredients to make a quick fall granola. From start to end it took me 35 minutes. 5 minutes to put together all the ingredients, and the remaining 35 minutes to bake the granola. What I love about this granola is that it’s got the perfect flavors and texture. It’s mildly sweetened with maple syrup, it also savory at the same time, it had a right crunch and the pumpkin spice totally enhances the taste. We made a batch enough for home and to share it with our neighbors, the kids loved it. I know for sure I will be making more of this and many more variation and twists to this recipe, this fall.

1 cup oats

1/8 cup almonds

1/8 cup pecans

1/8 cup pumpkin seeds

1/8 cup cranberries

1/4 cup maple syrup

1 tsp pumpkin spice mix

Preheat oven at 425 F

Mix all the ingredients together in a big bowl. the pumpkin seeds were already salted and toasted so I didn’t add more salt.

Line a baking container with parchment paper and pour in the mixture and press firmly.

Bake for 30 minutes at 425 F.

Allow it to cool.

Once cool either cut the mixture into bars or just crumble it.

I love homemade granola because it's so much healthier than store-made ones, and you get to personalize how it tastes! This recipe has all my favorite elements, so I'll be trying to make this combo soonSondra xx prettyfitfoodie.com
