Those little hands are my 5 yr olds. He loves making things with me in the kitchen. I started engaging him in the kitchen early. you can check out my post on 10 Ideas how to engage kids in the kitchen, here. So making these popsicles is a part of our summer fun. My observation is that when kids get involved in making something, they look forward to the end result and enjoy the end product even more. It’s not only rewarding to them but for us too. Now that he is 5 he helps me by adding the raspberries in the blender. A few attempts at squeezing the lemons before he passed them on to me for the final work. Adding the sweetener and then finally pushing the blender button to get the right consistency.

Like I mentioned earlier these come together very easily, it’s literally making a raspberry puree. Most recipes involve straining the puree to get rid of the seeds, but I like to keep them as raspberry seeds are a great source of dietary fiber, fatty acids and antioxidants.  Add freshly squeezed lemon juice and a healthy sweetener like monk fruit extract and then finally water. Pour the liquid into popsicle molds and enjoy these delicious Raspberry Lemonade Popsicles in a hot sunny day. The flavors are sure to tantalize your tastebuds. These are super yum!!! Try it yourself!

  • 1 cup fresh Raspberries
  • 1/2 cup lemon juice
  • 1/4 cup monk fruit extract
  • 1.5 cup water

  • Puree the raspberries in a food processor or blender until they’re as liquefied as possible.
  • Add freshly squeezed lemon juice to the raspberry puree.
  • Add monk fruit extract or a sweetener of your choice and water.
  • Mix well, making sure the monk fruit extract has dissolved completely and then pour in popsicle molds.
  • Allow to freeze for a couple hours and the tangy raspberry popsicles are ready.

Yum! I'm loving all of the popsicle recipes during the heat right now. I made a batch of lemon ice pops the other day, but these raspberry ones look even better!
