Slow Cooker Buffalo Chicken Chili

Slow Cooker Buffalo Chicken ChiliI don’t know how it is  in your neck of the woods, but we are still dealing with some good weather here, so you know what that means? It is soup and chili weather! We were recently shopping at Target and I picked up some ground chicken, which is one of my favorite ingredients to cook with. It stays so moist and tender when it is slow cooked, even though it is so low in fat.

Days have been busy here, and I know yours are too, so making this chili in the slow cooker is so convenient! it is the perfect dump into the pot and forget about it meal! It smells delicious while it is cooking, which is one of my favorite parts. I used my favorite slow cooker from Target and let the chili simmer in there for a few hours.

Slow Cooker Buffalo Chicken ChiliI have made the traditional chili so many times this winter season, but really wanted to mix it up this time and do something different! Do you love buffalo chicken dip as much as we do? If you do, then this buffalo chicken chili will be a hit in your house. It tastes so much like the dip but in a healthy, dinner acceptable form!

You can really mix up this meal, starting with the intensity of the heat in the chili and also with the toppings. Topping the chili is one of the best parts, right? We love some tortilla strips and cheese on ours but use what you love! Also, start slowly with the hot sauce and add more to taste. I used 3/4 cup and thought it was perfect, but I also love spicy food!
