Slow Cooker Buffalo Chicken ChiliI don’t know how it is  in your neck of the woods, but we are still dealing with some good weather here, so you know what that means? It is soup and chili weather! We were recently shopping at Target and I picked up some ground chicken, which is one of my favorite ingredients to cook with. It stays so moist and tender when it is slow cooked, even though it is so low in fat.

Days have been busy here, and I know yours are too, so making this chili in the slow cooker is so convenient! it is the perfect dump into the pot and forget about it meal! It smells delicious while it is cooking, which is one of my favorite parts. I used my favorite slow cooker from Target and let the chili simmer in there for a few hours.

Do you love buffalo chicken dip as much as we do? If you do, then this buffalo chicken chili will be a hit in your house. It tastes so much like the dip but in a healthy, dinner acceptable form! 

Slow Cooker Buffalo Chicken Chili

You can really mix up this meal, starting with the intensity of the heat in the chili and also with the toppings. Topping the chili is one of the best parts, right? We love some tortilla strips and cheese on ours but use what you love! Also, start slowly with the hot sauce and add more to taste. I used 3/4 cup and thought it was perfect, but I also love spicy food! 

Slow Cooker Buffalo Chicken Chili With Ingredients you Can Pick Up at Target

1 lb ground chicken breast

3 stalks of celery, chopped

3 carrots, peeled and chopped

1/2 a medium onion, diced

1 8 oz. can of tomato sauce

1 15 oz. can of fire roasted diced tomatoes

2 cups of chicken stock

6 oz. of room temperature cream cheese

3/4 packet of dry ranch seasoning

Toppings:

tortilla strips, bleu cheese, green onions, etc.

In a frying pan, brown your ground chicken until cooked through and no pink remains. Once browned, add all ingredients, except the toppings, into your slow cooker. Cook on low for 4-6 hours or high for 2-3 hours.

So easy and so good! Pick up all your ingredients at Target (because you know you’ll be shopping there this week anyways) and you have a quick weeknight dinner!
