Sweet & Spicy Eggplant Lettuce Wraps
This Sweet & Spicy Eggplant lettuce wraps are an easy, light and delicious meal and can be prepared in under 20 minutes. They are bursting with freshness from the crisp lettuce and meatiness from the eggplant & bell peppers.
These delicious, mouthwatering Sweet & Spicy Eggplant Lettuce Wraps are filled with amazing flavors and I can feel good about eating these for dinner. I usually just pair these with a simple side salad for dinner and our tummies are full and satisfied. Target achieved… happy dance!! I am sure you would have noticed the pun here. Honestly, we love shopping at Target and were recently shopping for return gifts or my son R3’s birthday. I was surprised at the variety of gifts you could between $2-5. We bought everything we needed for the birthday party and for this delicious Meatless lettuce wraps at Target!!
Me and my family first tasty lettuce wraps at P.F. Chang’s. I also have a lot of friends & family that go there and always order their lettuce wraps.I must admit, they are very darn tasty. But I will also say that I think my Sweet & Spicy Eggplant lettuce wraps could give those lettuce wraps run for their money 😉 And a bonus is, you are making them yourself, so you know exactly what is going in and can control the ingredients.
I do not believe in depriving myself of the things I love but I try hard to balance it with a lot of healthy food including vegetables, greens, legumes, and grains. We follow the 80/20 in my house and it has always worked for us.
I topped it all off with some cilantro (obv), chopped peanuts, and a bit more of the sauce used on the Eggplant.
You seriously need to try these wraps ASAP!!! I’ve been thinking about and craving them all week and will likely make another batch of them this weekend and serve it over some cooked Quinoa or Rice
Here’s what you’ll need to make this Sweet & Spicy Eggplant Lettuce Wraps
- 2 eggplant, cut into thick sticks
- 1 small onion/sliced
- 1/2 green bell pepper/ sliced
- a small piece of ginger/ julienne
- 5 cloves garlic/chopped
- green chili according to your taste buds
- for the Sweet and Spicy Sauce
- 1 tsp 5 spice powder
- 1/2 tbsp Fennel seed/sauf/optional
For the sauce
- 3 Tbsp soy sauce or Coconut Secret® Soy-Free Seasoning Sauce
- 1 Tbsp sriracha sauce
- 2 Tbsp sweet chili sauce
- 1 Tbsp Vinegar
- 2 Tbsp Ketchup
- Roasted Peanuts / For garnish/ optional
- 1 tablespoon sesame seeds, toasted /for garnish/optional
- Butter or Bibb Lettuce for making Lettuce wraps
Instructions :
- Heat a pan, put in oil, add fennel seeds, and garlic and ginger saute it for few seconds.
Add the eggplant and green chilies.
Add the onions and bell peppers, and stir-fry briefly.
Add sweet & spicy sauce.
Stir it well.
serve it with Butter or Bibb lettuce.Garnish with toasted sesame seed, peanuts or cashews, and ginger if desired.
