Unicorn Cupcakes

My daughter is enchanted with all things unicorn. I mean what’s not to love about this mythical, beautiful creature with a stunning golden horn? If I could be another creature I would want to be a unicorn.

Her birthday is quickly coming up (where did time go?) and she wanted special cupcakes to bring to school to celebrate. Can you guess what she wanted? That’s right unicorn cupcakes. Being the good mom that I am, I feel I need to oblige.

So off to Target we went and we found all the necessary ingredients that we needed to make these beautiful cupcakes. I used a cake mix to make the cupcakes but feel free to make them from scratch if you choose.

Materials Needed to Make 24 Unicorn Cupcake Toppers

White Fondant

24 Toothpicks

2 cans Pink Icing

24 marshmallows cut on diagonal

Pink or Gold sanding sugar

Sprinkles or other decorations

Instructions

Bake cupcakes according to cake mix directions, let cool completely.

Pipe pink frosting on top of each cupcake.

Cut each marshmallow in half on the diagonal to make ears. Press into sanding sugar.

To make the horn: roll a small piece of white fondant into a rope. Wrap the rope around a toothpick to make the horn. Let dry.

To each pink frosted cupcake add two ears and one horn.

Top with sprinkles, non-perils or other colorful toppings.

Aren’t these the cutest unicorn cupcakes ever? Any little girl would love to have these at the birthday party or they could even be served at a baby shower, or as an easter treat. The best part is that you can find all of the necessary items at your local Target! We are in our Target at least once a week, you never know what you might find.
